Day 1

Okay, so I've been journaling my food for a few weeks now, but I just decided today that since I'm on the computer a good portion of the day anyway, I may as well do my food journal here. It is within these pages that I will post everything that goes into my mouth including drinks, snacks, etc. I am bound and determined to be accountable for my intake and if posting it over the world wide web helps...then so be it. I will post new recipes I try with the nutritional value as well. This is a journey I have chosen to take for several reasons. My girls need me to be around for them...not eat myself into my grave. My husband needs my love and support, and my friends need me (probably not...but I like to tell myself this one. LOL) All of these reasons are genuine, but they wouldn't even exist if not for my Gracious Lord and Saviour. The Holy Spirit lives within me...I'm so sorry, it's not a very pretty place to live at the moment, but He's working in me, and I'm working on me, so this Temple of God should be beautiful in no time. :) So, here goes the first day.
I automatically start my day off with 80 calories doing a detox I learned about from a friend. I drink a cup of hot water with a few squeezes from a lime and then eat a medium Granny Smith Apple, so here goes.

Breakfast: 1 cup Hot water with a few drops of lime and a medium GS Apple = 80 calories
Snack: 20 cheeseballs (not the healthiest, but I had a small portion) = 80 calories
Lunch: Jack in the Box Taco (my hubby bought it for me...I had to eat it) = 193 calories (hey, they have 2 grams of Fiber so if I was doing weight watchers, it wouldn't be too bad. LOL)
also had a salad with 1 oz of ham, and 10 sprays of balsamic vinaigrette and water to drink = 65 calories

Total so far: 418 calories at 12:00

Okay, I did so well until about 5:00. I got a phone call at 1:15, Mandy's (my sister-in-law's) car had broke down. My husband had to leave work to come get me to take him back to work so I could go get Mandy. We went back to get the car with a friend (Alex). Alex and I spent about an hour trying to get the stupid battery out of the car to go and have it tested because we couldn't anyone to give us a jump...it was 109 outside, so needless to say, we were both dying of heat exhaustion and sweating to death. Once we got the battery out and into AutoZone, we went to McDonald's. Me being the frugal person I am, didn't want to spend a lot of money, but I needed something to drink...sooooo at McDonald's I got a sweet tea. Here's the rest of my calories.

1 MD's sweet Tea
1 chicken nugget (from one of the kid's happy meal)
8 french fries (I was starving...we usually eat dinner at 5:00 and it was already 5:30)
1 Diet Dr. Pepper (I didn't want to overdo it with another sweet tea)

for dinner, I made a delicious chicken enchilada skillet...it was only 393 calories for a serving (1/4 of the entire pan) YUMMY (I'll post the recipe at the end).
I had to do laundry (because Bailey's has been peeing in her panties a lot lately and was out of panties and her bedding needing washing). Went to Alex's and did laundry, while there, I had a glass of water and a granola bar for 100 calories.
So, I don't really know where I ended today, but I'm okay with everything I ate today. :)

Chicken Enchilada Skillet: cook chicken in skillet til it's cooked, shred the chicken then add some taco seasoning, add a can of kidney beans, a can of rotel (or jar of salsa), and 1 cup of water, Bring this to a boil. Once mixture is boiled, add 4 corn tortillas (while the mixture is coming to a boil, cut the tortillas in 1/2 in to 1 in slices). Stir the tortillas in and then let simmer for 5 minutes. Add as much cheese as you want and let it melt. Serve. (makes 4 servings) Yummy!

  2. hahaha...a weight loss ticker. You're so funny Adrienne. JK I might look into getting one eventually. I have no clue where I really want to be weight wise though, so I'll have to decide that first, then I might do it. I try to eat something every 4 hours (per Jillian Michaels), and I just keep it light and low cal. I very rarely go hungry. LOL

  3. I am hungry right now and need to eat lunch. Late... of course. Everyday! Then WIC then gym for some serious Cycle and weights.. :/
